Strawberry, Mint, Pistachio Summer Salad

The salad of the summer, congratulations, you found it.  

STRAWBERRIES. PISTACHIOS. PARMESAN. FRESH MINT. JASMINE RICE. ARUGULA.

That’s it. the entire recipe. No cooking required! (I literally microwaved the rice)

Because sometimes you don't need to cook, to make complex, to take things that are naturally delicious and feel like you have to process them. Sometimes you can just enjoy real, incredible food and the flavors that go together so beautifully.

 
 

Ingredients: 

  • 1 container strawberries 
  • 1/3 cup pistachios (I used lightly salted)
  • 1/3 cup parmesan
  • 1 handful fresh mint, rip off the stem 
  • Jasmine Rice (I used a microwaveable organic package!) 
  • Arugula
 

honey lemon basil vinaigrette:

1/3 cup olive oil

1 tbsp honey 

juice of 1 lemon + zest

salt and pepper

2-3 cloves minced garlic

chopped fresh basil

 

Combine all in a mason jar, shake, pour!
