Chunky Monkey Banana Ice cream (3 Ingredients!)

Let me just tell you, this is so unbelievably decadent, so satisfying, and SO EASY.  

Here is the earth shattering reality: If you blend a bunch of frozen bananas together, it makes a consistency like ice cream... But then if you add some healthy fats like nut butter it REALLY tastes like ice cream.

Then if you add some extra dark chocolate chips? Get outta town.

 

Ingredients: 

  • 6-7 frozen bananas, chopped

  • 2 tbsp peanut/cashew butter

  • 1/4 cup dark chocolate chips

(I use 82% or higher dark chocolate, you really don't need more sweetness here!)

 

 

 

Instructions: 

1. Take out the frozen bananas and let them sit for 2-3 minutes to slightly defrost.

2. Place chopped bananas in a high speed blender or food processor. Blend continuously for about 2 minutes, scraping down the sides intermittently. If you find it is not coming together after a few minutes, add 1-2 tbsp almond milk and continue. 

3. When a smooth, ice cream like consistency forms, add the peanut butter and pulse 2-3 times. Lastly, add the chocolate chips and pulse 2-3 times.

4. Enjoy immediately or freeze for an hour and enjoy! When you refreeze it, you may have to let it defrost for 10-20 minutes so that it is not frozen solid.
