One Pan Salmon Dinner

well hot PAN, this one sheet pan dinner is perfect for salMONDAYS! This is a real thing in our home, and if tacos get Tuesday, then it is the least you can do to give salmon Mondays.

Non fish makers, you can do this.

You just take a sauce (I used sundried tomato spread, or you can do a pesto too) and baste (spread) it on.

It’s all about that BASTE, bout that BASTE.

No TROUBLE! 😏

Last and most important part: you would then have to stop complaining about how hard it is to eat healthy....

 
 
 
 

ingredients 

•1 lb wild caught salmon

•1 sweet potato

•broccoli or broccolini

•cherry tomatoes 

•white onion

•garlic

•olive oil

•sundried tomato spread/red pesto

•salt/pepper

 
 
 

instructions

1. Preheat to 400. 

2. Chop your veggies into like sized pieces. Put on a sheet pan with a lil olive oil, salt, pepper, garlic.

3. Bake 25 min.

4. Baste (or just lather) salmon with sundried tomato spread, and place on top of roasted veggies.

•put it all back in the oven for 8 min on broil!

 

VOILA!

 

I put mine over basmati rice & added some avocado.

Do your thang. & do it better than you could before all these omega 3’s.
