No Bake Dark Chocolate Tahini Date Bars

You can yell that its fall all you want but it is still 90 degrees here in FL, so I will still be making frozen, no bake desserts. I had this recipe in my brain for a while because I wanted something nourishing and nutrient dense to be able to grab and go mid day and not many of the packaged bars on the shelves in grocery stores can offer that.

If you are immediately nervous about using Tahini, don't be. Tahini is made from ground sesame seeds, used in Mediterranean and Lebanese cooking and has the most amazing, umami taste! It is one of the main ingredients used in hummus, and is so versatile that you can make it savory or sweet. You can find this in your local grocery store either in the International Foods aisle with other Mediterranean staples, or next to nut butters like cashew, peanut, and almond butters.

 
 
 
 

No Bake Dark Chocolate Tahini Date Bars 

ingredients:

  • 1 cup pitted dates
  • 1/2 cup rolled oats
  • 1/2 cup lightly salted cashews
  • 1/3 cup tahini
  • 1/4 cup maple syrup
  • 1/2 cup dark chocolate chips, melted
  • vanilla extract
  • pinch of sea salt
 
 

instructions:

  1. Add all dry ingredients (dates, oats, cashews) to a food processor and blend until completely combined.

  2. Add the remainder of the ingredients, (everything except for the dark chocolate) and blend until a dough begins to form, making a ball.

  3. Line a bread pan with parchment paper. With a spatula, scoop out the dough from the food processor and press it into the pan.

  4. Melt the chocolate in the microwave 15 seconds at a time, stirring in between. Pour it on the dough and smooth it on top, sprinkle the sea salt.

  5. Put it in the freezer for an hour, take it out of the parchment and cut into strips, it will last all week!
