Blackened Salmon with Mango Avocado Salsa

My favorite summer recipe is here and ready to become YOUR favorite summer recipe! With only 8 total minutes of cook time, you are running out of excuses not to make this flaky, flavorful hunk of joy.

RECIPE
ingredients:
- 2 lbs wild caught salmon
- garlic powder
- onion powder
- smoked paprika
- salt and pepper
- 1 tbsp grass fed butter, ghee, avocado oil, or coconut oil for coating the pan
- 2 ripe avocados, diced
- 2 mangos, diced
- 2 firm roma tomatoes, diced
- 1/2 white onion, diced
- 1 tbsp minced garlic
- 1/4 cup chopped cilantro
- juice of 1 lime
- 1 tsp salt & pepper
instructions:
1. Heat a skillet over med/high heat. season the salmon fillets with all of the spices, they should have a reddish rub all over them. Add 1 tbsp butter in the pan until it melts. Place each fillet in the pan skin side down and let sear for 3-4 minutes. Flip and cook 3-4 minutes on the other side. It should be flaky when finished.
2. In a medium bowl, combine all diced veggies and chopped herbs and stir together. Top salsa on each salmon fillet and enjoy!
